Pumpkin Cheese Cake

Made with gingersnaps and graham crackers. the crust alone on this cheesecake is heavenly!  A rich, lightly seasoned pumpkin creamcheese filling, topped with a sweet sourcream layer, makes up the majority of this delectable treat.  All of that is then topped off with homemade vanilla whipped cream, gingersnap crumbles and caramel drizzle.  A truly divine desert, regardless of the time of year!
